The one thing I'd say about your first paragraph - over time, incentives are the best predictor of behavior. Groups of people will always pursue their interests (being "selfish" if you prefer), even if some individuals in a group "rise above" their own interests and act in ways we may think of as noble. But in the heat of battle, you can count on businesses on whole doing whatever is in the business's best interests - Secy Perez nod to that is that businesses will not fire or alienate employees who comprise the glue that holds them together. But incentives can move in highly unexpected ways.
Take credit derivatives - IMO they created incentives that the creators of the derivatives never imagined.
