I remember smelling it at my grandparents house too, but
I also remember the igniter clicking for 30 seconds before a ball of flame would erupt on ignition. Scared the heck out of me as a kid.
Mine lights almost immediately so I get no gas smell. I also have electric ovens. In my experience gas ovens do give off more of a smell than the cooktop burners
Maybe they’ve made the induction stoves better because everyone raves about them, or maybe you need to adjust to how they cook, but we had one at an air bnb and I kept burning stuff then turning it down too low and then over adjusting and turning it too hot.
