The job of the court is to draw these lines, and give standards for people
to be able to follow the law. That is not the same as making the law.
Think of Roe, when the court said that abortions were legal until viability. That was a standard that people understood, and women knew that they couldn't get abortions a week before delivery (the right's performative conniptions over partial birth abortions notwithstanding).
There are close calls where people of good faith can disagree. Whether a President should be granted immunity for all acts is not one of those.
It is also important to note that this is not the central issue of the trial. This is an interlocutory appeal by Trump. I would argue that you are mistaken about who is attempting to turn the trial into a show.
