I think there are exceptions to the rule. One of the things that initially revived the lab leak theory was that initial variants did not appear less deadly, suggesting the bug may not have been natural.

But basically, evolution doesn’t favor high mortality in hosts. Dead hosts don’t transmit illness. The best case from the germ’s “standpoint” is minor or asymptomatic illness while the host sheds lots of virus to new hosts.
